- 2 tablespoons bone broth gelatin

- Optional sweetener (stevia or erythritol, if tolerated)
Instructions

- Bloom the gelatin: In a small bowl, sprinkle the gelatin over the water and let it sit for 5-10 minutes to bloom. This softens the gelatin and prepares it to dissolve properly.

- Heat cream and bone broth: In a saucepan, heat the heavy cream (if using) and bone broth over medium heat until it’s just simmering. Do not boil.

- Dissolve the gelatin: Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Add sweetener if desired.

- Pour and chill: Pour the mixture into ramekins and refrigerate for at least 4 hours, or until set.

- Serve: To serve, dip the bottom of the ramekins in warm water for a few seconds to loosen the panna cotta, then invert onto a plate. You can garnish with a dollop of whipped cream (if tolerated).
Notes
- If following a strict carnivore diet, omit the sweetener.
- Bone broth provides added nutrients and collagen, making this a great option for gut health.
- If using only bone broth (no heavy cream), the texture will be firmer and more gelatin-like.
