Description

These Chocolate Rice Krispie Treats are an easy, delicious, no-bake dessert packed with gooey marshmallows, rich chocolate, and crispy cereal. Perfect for any occasion, they come together in minutes with just a handful of ingredients.

Ingredients

Scale

    • 6 cups Rice Krispies cereal (or another crisped rice cereal)

    • 4 cups mini marshmallows (plus an extra ½ cup for optional swirls)

    • 3 tablespoons butter or almond butter for a nut-free option but unsalted is preferable

    • 1 cup semi-sweet chocolate chips (divided)

    • ¼ cup unsweetened cocoa powder (optional, for deeper flavor)

    • ½ teaspoon vanilla extract (optional)

    • ½ cup candy-coated chocolates”(M&M’s or similar” (optional)

    • Pinch of salt (optional, but recommended)

Instructions

  1. Melt the Butter

    • Place your saucepan over low heat. Add the butter and let it melt slowly. If using a microwave, place the butter in a large bowl and microwave in 15-second intervals, stirring in between, until melted.
  2. Add the Marshmallows

    • Keep the heat on low. Stir in 4 cups of mini marshmallows and gently mix until almost melted. Stir constantly to avoid burning.
  3. Incorporate Chocolate and Cocoa

    • Once the marshmallows are nearly melted, add ½ cup of chocolate chips and the cocoa powder (if using). Stir slowly until fully combined.
  4. Add Flavor Enhancers

    • Stir in the vanilla extract and pinch of salt. These help balance out the sweetness.
  5. Combine with Rice Krispies

    • Remove the saucepan from heat and pour in all 6 cups of Rice Krispies. Stir well. If you reserved extra mini marshmallows, fold them in now along with the remaining ½ cup of chocolate chips.
  6. Transfer to Pan

    • Prepare a 9×13-inch pan by lining it with parchment paper or spraying with non-stick spray. Scoop the mixture into the pan and gently press into an even layer.
  7. Cool and Set

    • Let the treats sit at room temperature for 30-60 minutes, or chill in the fridge for 20 minutes for faster setting. Cut into squares or rectangles and enjoy!

Notes

  • To keep treats fresh, store them in an airtight container at room temperature for up to one week.
  • In warm climates, refrigerate to prevent melting, but let sit at room temp before eating to soften.
  • Freeze for up to two months if wrapped well in plastic wrap and placed in a freezer-safe bag.
  • Drizzle melted chocolate or caramel over the top for extra indulgence.
