Description
These soft and delicate Madeline cookies get a rich and velvety texture from the addition of heavy cream. With a golden crust and a light, airy crumb, they are perfect for pairing with coffee or tea.
Ingredients
- 1 cup (140g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs (room temperature)
- 1/2 cup (100g) granulated sugar
- 1 teaspoon pure vanilla extract (or 1/2 teaspoon vanilla bean paste)
- 1/2 cup (113g) unsalted butter, melted and cooled slightly
- 1/4 cup (60ml) heavy cream (chilled)
- Optional: 1 teaspoon lemon zest or orange zest for a citrus twist
Instructions
-
Combine the Dry Ingredients: In a small bowl, whisk together flour, baking powder, and salt. Set aside.
-
Beat the Eggs and Sugar: In a separate mixing bowl, beat eggs and sugar until pale and thick—about 3 to 4 minutes with an electric mixer.
-
Add Vanilla (and Zest if using): Stir in vanilla extract and optional lemon or orange zest.
-
Pour in the Melted Butter: Slowly drizzle in melted butter, folding gently to maintain airiness.
-
Incorporate the Cream: Fold in the chilled heavy cream with slow, sweeping motions for a velvety batter.
-
Fold in the Dry Mix: Gradually add flour mixture, folding just until combined. Avoid overmixing.
-
Cover and Rest: Cover the batter and refrigerate for at least 1 hour, preferably overnight.
-
Preheat and Prep the Pan: Preheat the oven to 375°F (190°C). Butter and flour your madeleine molds.
-
Fill the Molds: Spoon or pipe the batter into the molds, filling each about 3/4 full.
-
Bake: Bake for 8-10 minutes, until the edges are golden and the centers spring back when touched.
-
Cool and Decorate: Remove from pan, let cool, and dust with powdered sugar or dip in chocolate glaze.
Notes
- For extra flavor, let the batter rest overnight in the fridge.
- A light dusting of powdered sugar enhances the delicate texture.
- Madeleines taste best fresh but can be stored in an airtight container for up to 3 days.
