- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- ½ cup sugar
- 2 large eggs
- 2 tablespoons matcha powder
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, ¼ cup sugar, and melted butter.
- Press the mixture into the bottom of mini muffin tins.
- Beat cream cheese and ½ cup sugar until smooth.
- Add eggs one at a time, then mix in matcha powder and vanilla extract.
- Pour the cheesecake mixture over the prepared crusts.
- Bake for 15-20 minutes, or until set.
- Let cool, chill for at least 2 hours, and serve!
Notes
- For a stronger matcha flavor, add an extra teaspoon of matcha powder.
- These cheesecake bites can be stored in the refrigerator for up to 5 days.
